Mom's Salmon Patties

When I was a child, I always loved it when my mom made us salmon patties for supper.   I was making them for our lunch  today and decided to share her recipe with everyone!   I have never done a "food" post so please bear with me!
I always make a double recipe so we have extra...they freeze beautifully.

2 cans of salmon ( I remove the skin and bones)
10 crushed saltine crackers
1 heaping tablespoon of cornmeal
1 large egg (beaten)
2 tablespoons of mayo
fresh dill to taste (chopped)

I always have a dill plant in the kitchen...we use it in lots of things!

I put enough oil in the skillet to come half way up the salmon patties...and cook them on a medium heat til they are brown.
This recipe makes about 12 medium salmon patties.

use a splatter screen...salmon patties really like to pop grease!
Now for the sauce.....As a kid, I didn't like tarter sauce, so mom always made me her special sauce.    McDonalds big mac sauce taste suspiciously like my mothers...LOL!    It's about 2 tablespoons of mayo with about 2 teaspoons of ketchup added to it!
H likes tarter sauce (and so do I , now)    so I always make two kinds of sauce.  I have a simple recipe of about 1 tablespoon of mayo to a small diced snack.mm pickle, and diced fresh dill to taste.  The picture reflects 3 tablespoons of mayo and 3 small pickles.  I sometimes add diced green onions, parsley,  or chives
I am not trying to promote any cooking products, I am just showing you the products that I like to use.  I like the snack'mm pickle the best...I don't think they are as strong as some other brands.

I had been seeing this potato on the internet and decided to make us one! 

Cut potatoes almost all the way thru....drizzle with some butter and olive oil...sprinkle with sea salt and pepper..425 for about 40 minutes.  Ours were not very big potatoes, so it could take longer.  

I really enjoyed doing a cooking post, who knows, maybe I'll do another one sometime!  Living in New Mexico, I have some great southwest recipes!

  1. I love salmon patties and make them frequently. Mine are the same, but I've never used mayo. I think I'll try that next time, and that baked potato looks so good with it. Thanks for sharing!

  3. Oh my mom made Salmon patties all the time and I do too. Only difference is we don't add the mayo. I will have to add that next time and give it a try. I love these, they are so good, and great leftovers too. Hugs, marty

  8. Looks and sounds delish! Love your two sauces recipes and using the fresh dill! I think this is a great meal for when I don't have any fresh meat on hand to use, but have the handy cans of salmon. Those potatoes look great too! This is a very nice meal!

  10. Salmon patties were a favorite of mine growing up. My boys are not too crazy about them, so I do not make them as often as I would like. Your post has made me hungry for them!
