How I Fry a Steak

What????   Fry a steak instead of cook it on the grill?     Well, today is HOT, cloudy, humid and H doesn't want to stand out at the grill.   Me neither!!!   Actually, I think I prefer a fried steak to a grilled one!

My granny always fried our steak...they didn't have grills back then.  We lived on the farm in the  little house that sat right next to the main house where Granny and Papa lived so I ate over there all the time.   My favorite meal she made was fried chicken and apricot cobbler!  

H cuts his own steaks...that way they are just the thickness that he likes...  The steak I'm cooking today was part of the bunch he cut up for the 4th of July cookout.

This is what we grilled out the 4th of July...  You wouldn't want to fry steaks for a crowd,   but it's easy if you are only going to cook a few of them. 

Frying a steak is sooo simple and quick...

First you want to salt your steak (that works as a tenderizer)  then let it set at least 40 minutes.

 Your steak will need to be room temperature before you cook it.
                           Don't add pepper til after it is done...pepper gets kind of bitter when you fry it.   
Get out your cast iron skillet, put a couple of splashes of oil in it...when the oil starts to smoke a little, put your steak in.   I cook ours about 3 minutes on one side, turn it over with your tongs (don't use a fork... you will let all the good juices out when you "stick" it) 


When you turn your steak over, add a tablespoon of butter (not margarine) and baste the top of the steak (just tilt the pan and spoon some over it).  

I cook the other side about 2 minutes.  We like our steak medium rare ...140 degrees.  Take your steak out of the pan about 5 degrees sooner than you want the finished temperature to be.  It will cook some as it "rests"

My Granny could touch her steak and tell what the temp was...but me????... I have to use a gauge!

I just put a strip of foil over the top of the steak, lay my tongs on it to hold it down (I have my fan on)     Now let it set for about  5 minutes.

While our steak is setting, I will get our plates ready.  We are having a simple salad of lettuce and tomato and home made potato salad .

Medium rare...just the way we like it.  We don't eat as much as we used to now that we're older, so we always share a steak.  
It was yummy!



It has been cloudy all day..no rain yet...but the day isn't over!

    My hubby loves steaks and sometimes we are out of propane for the BBQ and I must fry them but my fried steaks never taste very good. I am going to buy a heavy skillet like yours. Thanks so much for sharing. Hope it cools off a little for you. Take care,

  4. Where can you find a beautiful side of beef like that? I know hubby would love to cut his own steak too. Often times, the ones at the grocery are too thin to keep them med-rare inside when cooking and get a nice sear on the outside!
    Also - what temp do you set your burner at? I have 1 for Lo and 9 for Hi.....and all the numbers in-between.

    1. Hi Cassie, we buy our meat at a local Affiliated store. The meat in the photo is Ribeye but H also cuts up NY strip sometimes. Hugs, Penny

  7. Oh my gosh, it's only 6:20 in the morning but I am drooling looking at that steak! I hated steak up until my 30's, when I discovered the reason I hated it was because I'd never had it cooked properly...always overdone and tough. Now I could eat it everyday and I love mine rare! We don't have a grill anymore but my hubby can grill a mean steak!!! Now he does it for me in the grill pan the same way you've shown here:) Yum!!!

  8. OK first...I am wondering what the big cut of meat he used to cut up steaks is. I would do this in an instant but I'm not sure what to buy to get the best steaks. Second...I love cooking in cast iron. Third...you have one of my favorite summer meals there, right down to the poppy seed dressing. Try Avocado with poppy seed dressing it's delicious.

    1. Hi Kara, the meat H was cutting up this time was Ribeye...but he has also done NY strip. We get our meat at a little local grocery store that carries Affiliated products. We can buy it bulk like that or pay them $1 lb extra to cut it the way we want it. Hope that helps....hugs, Penny

  9. The only time my grandparents bar b qued was once a year back at our little lake behind the back 40, my grandpa built a bar b que pit ,I can see it now in my minds eye, but never did I have a steak as a child, just grilled chicken

  15. I love pan fried steak...always have!!! I do mine in a regular skillet and will sometimes sauté onions in butter in the pan first and push them aside for the steak. Then the juices from the steak mix in with the onions....to die for........

  16. Wowza, that's a lot of steaks! Great idea to fry them indoors, it's been sooo rainy lately that it's hard to use the grill at all. I'll have to get our my cast iron skillet :)

  21. Well, this is exactly what I needed to learn! To us grilling is a pain--either wait for the coals to get hot, or use a gas grill, and we don't like the taste as well, so I've been thinking about the stove route, so thanks! Sounds yummy and fast and easy! ~Zuni

  28. I love fried steaks especially in the winter time when there is a ton of snow outside! I cook ours in a cast iron pan as well but don't add oil until the pan starts to smoke. It only takes a second to get hot and then add the steaks and cook them to a medium rare...the steaks always taste yummy fried!
