Easy Homemade Banana Pudding

Banana Pudding...comfort food......oh yeah!!!    My mom made the best banana pudding from a recipe her mother gave to her...and now I love to make it for my family.  When the kids were at home, I used to make big bowls of it.   But now that it is just H and me (most of the time)  I  make little individual desserts or Banana Pudding Shooters as I like to call them!
Sometimes we might want a big serving.....
or just a couple of bites.
I only made half of the recipe today and I have 6 small servings.   
 
The ingredients are pretty simple....
Measure l 1/2 cups of sugar, 3/4 c flour, and a dash of salt in a sauce pan.   Beat 2 eggs..... in a bowl mix 1 can of evaporated milk with enough water added to make about 4 1/2 cups of liquid./

Add the liquids to your sauce pan of dry ingredients.

Whisk until all is combined and there are no lumps.

Stir CONTINUOUSLY over a low heat (about 3-4 on electric stove)  This scorches easily, so do not leave unattended!

When it starts to bubble and thicken, remove from heat.

Let it cool a minute or two and add 1 tsp vanilla.

When the pudding is completely cooled, you can start to assemble your Banana Pudding.    I divided my pudding in half and added chopped bananas to one half.   I left the other half plain and will layer bananas and pudding in part of the cups.


These varied serving sizes are perfect for a Dessert Tasting Party or for a family with kids that want smaller servings and adults that want a  little bit more.....or a family with older adults that want less and teens that want more!

Which size do I want with my lunch.....hmmmmmm....the big one!

  2. Penny, I do love banana pudding. Especially in a pretty vintage glass or dish! That big round etched glass with the gold rim looks like some my mother had in the early 60s.

  18. Hi! Great recipe can I use 1% milk instead of evaporated milk? and is that 1/2 a cup of sugar or 1 1/2 cups?

    1. Hi Christina! I use 1 and 1/2 cups of sugar.....and I'm sure 1% milk will work, but you pudding will probably not be as rich and creamy. Enjoy your pudding...hugs, Penny
