Cooking for Two


Eastern New Mexico is being blessed with another rainy day....we need all the rain we can get in this dry area.    H went out early this morning and picked some peppers....bell and hot......so,  we've decided to stay dry inside and do a little cooking.    After cooking for a family for many years,  empty nesters find it hard to cook for two.    I say....why fight it.....cook like I always did!
   

H ran over to the grocery store and picked up 4#'s of meat and we are going to make meat loaf  for today......and  some for the freezer for several more days!

 
    Onions,  celery,  bell peppers, and a handful of yellow tomato's are chopped  and sauted before I assemble the meat loaf.   H bought one of those copper skillets that you see being run over by a car in the commercials.....he loves it!


Salt and paper is added to 2#'s of meat.....2 eggs......a can of tomato sauce,  and about a cup and a half of crushed crackers.   I make it in two batches because my largest bowl will only hold a batch at a time. 


I put my meatloaf in a very large pan....top it with ketchup and bake for about an hour at 375 or until done.
  

While the meat loaf is cooking,   I am going to set the little bar at the end of the island.     I am using paper place mats......my go to! 


H almost refuses to eat on paper plates,  so I am using our every day dishes.    


I cook 10#'s of potatoe's at a time and mash them,   so there is always a bag or two  in the freezer.


H is having some of the roasted and diced hot peppers that he picked this morning with his meat loaf.


All the hamburger meat used for the meat loaf was less than $8 and we have enough to serve two for about 10 meals.


We put the smaller bags in a couple of gallon freezer bags and put them in the freezer to use on a day that we are busy and don't want to cook......the rest went in the refrigerator for a meat loaf sandwich  for supper tonight.  
 As you can see,   I don't know how to cook for two people....lol!    But I do know,    that by cooking the way I always did,  I don't have to spend as much of my retirement time in the kitchen!


The sun came out later this afternoon and it is a gorgeous day!    We have lots of sunny days......about 75% of them are and our average temp is 72...low is 44.....  it's a great place to live!

  4. Penny, good thinking! I love having meals-for-two in the freezer. Made a double batch of spaghetti sauce the other day and froze six meals-for-two in addition to having it for dinner. I never use paper plates, but my sister was the queen of paper plates. It was a family joke -- there was almost no food too wet to be served on those ordinary little paper plates; setting the table at her house, we'd ask are we using plates (meaning paper ones) or hard plates!

  5. Ever since I bought a vacuum sealer at a yard sale, I have been filling my freezer. I only buy meat that has been reduced and freeze using the vacuum sealer. Best thing I've ever bought! Just wondering about the potatoes...do they have a "pre-cooked taste" after they are frozen? You know how potatoes that are reheated taste? If they taste like fresh, I might give this a try.

    First of all, love the weather in your area. I could easily get into living with those temps. We get all the humidity with the heat here in the Northeast and that is what kills me. I like your thinking and that is something that i am going to try to do since Joe is retiring and I like that you made the meatloaf in that large pan! Great idea!! Joe makes chilli and what we call Whimpies but some call them Sloppy Joe's, and freezes portion for another time.

  11. I love the way you think. I do the same. Our children are rarely home for dinner, but I still make a large meal. We have left-overs in the frig for days, it makes life so much easier. And I'm not spending my whole life in the kitchen, either cooking or doing the clean-up! I love having left-over meat loaf, we all love it, and the mashed potatoes can also be used for potato cakes as well as just warmed up!

  12. I understand exactly what you mean by cooking for two after cooking for many. I still cook like the kids are still at home and it's much easier. The only thing is that the Mr. isn't found of leftovers or too many freezer meals. He does however love meatloaf so I will spring this one on him.   17. Love your paper placemats. I used some scrapbooking paper (vintage looking), as placemats at a party. Worked out well and you can find them on ebay pretty inexpensively.

  18. Meatloaf sandwich is one of my favorite lunches. Having that frozen meatloaf on hand for days you don't want to cook is so handy. I need to do more of that. Glad you shared.

  20. I had two boys, so cooking was always mega amounts around here, too. Sounds nummy and I had never thought of baking in a large pan...which I will try. I use oatmeal instead of crackers...which soaks up all the delicious juices of the meat. Will definitely try the big pan though. Grins and thanks, Sandi
