Simple Summer Supper

The sun is going down and ending a beautiful summer day.     H and I are going to enjoy a simple summer supper in the back yard.

We are going to have our supper on the table that H bought at the auction for a few dollars last Saturday.    It's a pretty unique table.....the three sides fold down to make a corner table  or you can lift the leaves,  give the top a twist,  and you have a round table.   I was surprised at how light the table is to carry outdoors...about the weight of the card table that I normally use when we eat outside.

My tablescape is going to be very simple....

A vintage table cloth and a simple centerpiece that I made in a big mason jar.....

These thistle bushes grow wild here in Eastern New Mexico.....

The stems are thorny at the bottom but the top of the stem and the flower are soft.

I cut my flowers from a field right by the railroad tracks.

Simple meal tonight....just a few ingredients....

I bought this spiral thingy ($15) at Bed Bath and Beyond.   You just twirl your squash in it and you have squash "noodles"  or zoodles as they are sometimes called. 

I just sauteed the squash in butter for a couple of minutes,  stirred in the basil pesto and artichoke pieces , diced the pepperoni,  and sprinkled everything with cheese.   Could it be any easier?....took about 5 minutes.    


Strawberries and whipped cream for dessert...who wants to slave in the kitchen on such a beautiful evening.....not me!

  2. your al fresco dinner is really lovely. you have such a gorgeous setting. I just bought a "Spiralizer" too, and did a light saute with the noodles. I'll have to try steaming them. your dinner looks healthy and delish!

    That is one great table and something that I have never seen that likes of before!! Your supper looks really good! Unfortunately the pepperoni would do me in. There are so many things that i just can not eat so that is why we never eat out but order in and eat at home.
