Blueberry Zucchini Bread



I have had so much fun trying to find new ways to cook the zucchini that we are harvesting out of our backyard garden.    I  found a recipe for Blueberry Zucchini Bread today and decided to try it.

I love to eat outside ,  but it's pretty warm today.....  so we are having a bite at the bar in the kitchen.    

I will serve the Blueberry Zucchini bread for our dessert .....

If you would like the recipe,  click on the link below.    I like  my bread iced,  so I made a small batch of lemon butter cream icing.   Sorry,  I don't have a link for that recipe...it's all in my head....lol!   This recipe makes two loaves......I left the other loaf plain because it is going in the freezer.

I thought these tiny ironstone platters would be fun to serve the bread on.....

What are we having for lunch today.....

Simple and quick!
Instead of serving rice or noodles,     I will make zoodles out of the piece of zucchini that was left over from the bread. and serve the Mongolian beef over that.      I am going to make zucchini chips tomorro.   I've never made them before but I've heard they are yummy!

    Looks good!! Love the tea pot in one of your photos.... I do hope to do some occasional baking when I go part time in3 DAYS!!!!! WHOA!! But who is counting??? LOL!!

  9. I just made zucchini bread on Thursday Penny and I add a glaze to mine. Always so tasty with a little something on top. I will try this one with the blueberries next time I make it. Sounds yummy! Thanks for sharing with SYC.
