Posole...Soup of the Southwest

Posole is the Soup of the Southwest!  There are lots of ways to pronounce Posole....I say  "pos o lay"!    I have lived in New Mexico all of my life and I never tire of food with a southwest flavor.
  When we make posole...we make a lot of posole!   There is always a crowd and it freezes well if you don't eat it all...which almost never happens.
Start with a nice pork roast, about 2 1/2 to 3 lbs.   Cook it low and slow so it will be tender, about 2-3 hours at 350.   We are cooking  8 roasts today....some of the meat will be made into tamales and some into BBQ.

When your roast is done let it cool.

While it is cooling,  chop a large onion and 3-4 cloves of garlic.  

Lightly saute the onions and garlic in a big splash of oil.

Cut your roast into bite size pieces.  I separate the fat (plate on the left) from the lean (plate on the right)   We like our meat pretty lean,  but you can add as much fatty meat  as you like.

Add the roast to your sauteed onions and garlic.

Add a large can of hominy...I use that huge 6 lb + can  that Walmart sells.    I don't drain the hominy as the juice it is in adds lots of flavor.

 Then I add about 8 cups of that wonderful pork broth.   You can make a skinnier version of Posole by using more water, I have even used chicken broth in a pinch!

  Simmer for about an hour on top of the stove to blend all the flavors together.

This recipe makes a BIG (8-10 quart) pot of yummy soup...enough for a big crowd!  

You can dress it up with sour cream, cheese, avocado, picante sauce, whatever you like.  

We are going to have a bowl with some sour cream and a few spoons of red chili.   I like Monroes red chili sauce , it is made in Albuquerque NM by a local restaurant.  

This hearty soup is simple to make, budget friendly,  and super yummy!

I grew up on it, as my daddy was born and raised in Santa Fe, and every Summer was spend at my grandparents and great~grandparents home where they fixed it as well...     Hmmmmm... looks good! Perfect for a cool Fall day....
    We have been having unseasonally warm temps. and have not had a frost yet. But that will change this weekend as we finally get some normal Pa, Fall temps.
    Good for your daughter!! I would love all the time off but the stretches would kill me at this age.... I had a particularly bad weekend at work and I am exhausted. I keep saying that I am too old for this but I carry the Health Care insurance which is excellent so I have to last as long as I could.
    I am so glad that the Remodel is over but I am still very stressed out with everything else I have going on and have gotten involved in. I think I bit of more than I can chew....

  6. This sounds delicious -- love hominy! Sounds like you had a very productive cooking time with 8 roasts going. Noted your Jewel Tea bowl -- very nice! I have a few pieces I've picked up here and there just because I like their story and the distinctive look.
